most of my published photos were shot with the D700

I tried a D700 this afternoon after 8 years of not using one and I was blown away by the character of the photos and the metering. theres something very special about the sensor of these cameras and how they handle details. something that I didnt see when I switched to the D4 and eventually the Df

the pixels look more defined and less mushy like what i get from a D7000 and everything that came after it.

do you see the same thing? is it just me imagining things?

I like the same for my Nikon D3s and also the D700.  I think the large pixels (Full Frame- 4284k, 12mp) contribute to this character and detail handling.  Files are also very flexible

The D3s was a pinnacle in its time. Still is, if the "small" files don't bother you.

I kept my D700 (although some new achievements came in) and still like it - should put it in action again soon

My son still uses my old D700 and has no reason to complain. Of course he cannot push the ISO beyond 3200 where I'd use 12800 with the Df (a 2-stop difference), but within those limits the image quality is quite good, even by today's standards. And above all, it *works* (no trouble in 11 years).

I'm embarrassed to say that between the self-quarantining due to  the CPVID-19 situation, and my ever- increasing ARMD, I've not picked up a camera in far too long. I can see, and enjoy, crispy sharp images on my display, but I'm dependent on AF in making my own images.

the details of the D7000 and D4 look "mushy" to me, not blocky like the previous generation

I like the files from my D4 better than those from my D3. They are cleaner at high ISO and are more malleable in post processing. I have no opinion on the details.

I cannot compare D700´s output with newer cameras as I did not try any of those.
But I bought used D700 last year again, after I lost previous one couple of years ago, and man - I do love this machine.
And they are cheap now. Really great. :-)

The D700 seems remarkably popular after 10 years!...a huge time in digital photo terms.   How do the files stand up to A2 enlargement?   Presumably there is no video facility...what about 'live view'...??

You are right there is no video functionality - which can be advantageous as well
D700 has got live view but that is not its strongest side. Live view is more complicated to activate than with  recent cameras and the mirror operations during live view are more "inefficient".
There is also a kind of LV- bug. When using AF-lenses with aperture ring and the camera is set-up to use the ring for aperture setting, Live view does not work.

.... How do the files stand up to A2 enlargement? ....

I did just a couple of such large prints and upscaled the files using some software (do not remeber which one though).
But I was very satisfied with results.

As much as i long for a D4s I can't seem to part with my D700 and D3.
As a matter of fact i can't seem to part with my D1x, D2h and D2x..
It's time to do it never the less if i plan to move on to a D4.

Gigapixel can make surprisingly good upsized files. Once upon a time a client ordered an 8 x 4m (!) print from a D1X file.
