Bayer interpolation is a controlled "smear" (not certain this concept applies here) in the chrominance domain. It does little to the apparent sharpness as such.  Pixel shifting influences both aspects. Not necessarily in an adverse manner, though.

If the K-1 can turn off pixel shifting, producing images of the identical subject with or without the feature enabled could answer some question. No focus stacking, please.

Pixel-Shift on the K1 is optional. You turn it on or off... if OFF, you get a 36 Mpx image, like on the D810. Let me know exactly what you want and I will take shots, but I may not be able to do it today, but I may have time. I am interested. I can assure you that at full res, pixel-shift is sharper (or something) than any other camera/lens I have used.

I'm not a believer, I'm an observer.

Take 2 separate frames of three subjects (or same subject, but different parts of it) with each option (pixel shift either On or OFF). That'll be 12 frames all together. Same lens, aperture, exposure, tripod, etc. on each frame. Put the RAW files in a Dropbox so I can access and download them. No need to hurry, my summer schedule is crammed full enough!!

so, 2 frames, one with Pixel-Shift on and one with it off.... of three subjects...so: 3 subjects x 2 = 6. What am I missing?

I said 2 frames each, meaning you take each alternative 2 times. Thus 2 * 2 * 3 = 12.
