Bob, Am I correct in assuming that an overcast sky is required to get this super clean white field?  It's a great look.

yes... it may have been a little too overcast and dark but i managed to pull these out.. fog helps as well for these high key shots.. an example without a reflection taken in fog.. http://www.pbase.com/bobfriedman/image/162179534/original.jpg

then you just have to click white with the curve tool..
