Bagel baker-St.Lawrence Market

Taken last weekend while I was in the St. Lawrence Market here in downtown Toronto.
One of the many "shops" inside the market is St. Urbain Bagel, a bakery which produces bagels in the Montreal style.
As I approached, the baker had just pulled a batch out of the wood-fired oven and was doing some quality-control before putting them up for sale. This shot was actually quite difficult to get as there is always a line-up for the fresh bagels, and I had to get kind permission from a customer to cut in line and get an unobstructed view.

What defines a Montreal style bagel? In any event, I enjoyed the image.  :)

Thanks, Robert! I was not aware that there is a Montreal style bagel. Two main differences caught my eye, separating them from New York style bagels.  "sweeter", and the wood fired oven. That would make them way different to my palate, which is that of a lover of the NY style.

I also prefer the New York style bagels, which are far more popular here in Toronto than the Montreal-style.

Robert, thank you for the introduction to the world of bagel.  Its origin is interesting.  The baker controlling the quality of the freshly baked bagels looks serious.
