While in England I had the opportunity to take a tour of the highest whisky distillery in the UK. Yes, it is in England, in the Peak District. It is a small operation but the talk about the history of both whisky and the distillery was interesting. There were samples included

This photograph was taken in the cellar. The discolouration on the back wall is from whisky fungus (
Baudoinia compniacensis). It thrives in the ethanol that escapes from the barrels as the whisky ages, known as the angels' share, and can be found everywhere that whisky is aging. It is perfectly harmless to humans and so distilleries generally don't bother removing it.
