Formally, today is Norway's Constitution Day -- however we look through that and call it National Day. Which is duly celebrated from sea level to the highest mountain tops -- and beyond (by parachuters and divers).
Nearly half a million people amassed in Oslo, the capital with 600.000 inhabitants, to watch the gigantic traditional children's parade with more than 40.000 children on the main street towards the Royal castle. Sun blazing from a cloudfree sky from early morning to near midnight meant scores of people got heat strokes, and new temperture records for May were established over large parts of the country.
I resorted to this dish, quite patriotic, and cooling as well.
