Did the tripod actually shake in the video(which was itself shaky)?  We used some of the old big wooden legged tripods in film school (c. 1988) and they were fairly solid as I recall.

I've been shooting large format in windy mountains myself. Given the wind drag and pull on such large devices, you defiitively need the most stable tripod you can carry. Not necessarily the most heavy, but stable. After having my first attempt in the Rondane mountains with my 4x5" cherry tree camera totally ruined as the Gitzo was hopelessly prone to wind-induced shakes, I used a Sachtler video tripod the next time. It's carbon-based and lightweigt, yet can support a massive load.

Ah so...wind changes everything.  That huge camera will be vulnerable to a moderate breeze, let alone real wind.
