A stop on the way to becoming olive oil..........

This was in use in Italy for the malaxation of olives up until 2015 when more modern equipment was installed. It would work in batches of 250 lbs of olives at a time.

i wonder whether the more recent methods or the milling grinders which you showed here produce the richest and most flavoursome oil?

My guess is it would be ones like these?

Well, I can't say for sure, but I suspect you're right. I know that a lot of hanky panky has been going on with the purity of many oilve oils imported into the US.

When I was an apprentice builder I mixed concrete and mortar in a very similar contraption, about 1964?
